Serves 4
2 pounds fresh pears 1 tablespoon
lemon juice 1 tablespoon light syrup 1/2 head frisée lettuce ,
cleaned and dried 4 bunches mâche, cleaned and dried 1/2 cup
vinaigrette 1/2 pound fried walnuts
Peel pears and cut
into wedges, removing seeds. Sprinkle with lemon juice. Poach pear wedges in
pear juice or light syrup until tender. Remove from cooking liquid and cool.
Toss cut frisée and mache with vinaigrette and arrange with pears and
deep-fried walnuts.
