GREEK COUSCOUS SALAD

Serves: 4

1 1/2 cups couscous
2 cups boiling water
1 1/2 cups garbanzo beans, drained
1 cup chopped red or yellow pepper
2/3 cup sliced pitted black olives
2/3 cup chopped red onion
6 tablespoons chopped mint
6 tablespoons olive oil
4 tablespoons lemon juice
1 1/2 cups crumbled feta cheese

Pour boiling water over couscous and stir to combine. Set aside until couscous is soft and water is absorbed. Fluff with fork.
Add beans, peppers, olives, onion and mint and toss.
Mix in olive oil and lemon juice, then feta cheese. Season to taste with salt and pepper. Refrigerate until ready to use.
