INSALATA DI CAPRI

This is a simple salad that requires the best ingredients. Can be prepared one hour before serving.
Serves 4 to 6


4 large vine-ripened tomatoes, sliced 1/4 inch thick
1 pound fresh cow's-milk mozzarella, sliced 1/4 inch thick
1/4 cup packed fresh basil or arugula leaves, washed and dried
1/4 teaspoon dried oregano
extra-virgin olive oil
sea salt to taste
freshly ground black pepper to taste

On a large platter arrange tomato and mozzarella slices and basil leaves, alternating and overlapping them.
Stack 4 to 5 layers of each ingredient.
Sprinkle salad with oregano and drizzle with oil. Season salad with salt and pepper. Serve cold.
