ITALIAN DRESSING

Makes about 1 cup of dressing.

1/4 cup red wine vinegar
1 clove garlic, minced
1/2 teaspoon salt
dash of pepper
1/4 teaspoon dried basil, oregano or mixed Italian herbs
3/4 cup olive oil

Whisk together vinegar, garlic, salt, pepper and herbs. Gradually whisk in oil. Taste and adjust seasoning.
This salad dressing may also be used to baste meat during the last 10-15 minutes of broiling or barbequeing.
The dressing keeps well in the refrigerator.
