MARINATED SALAD

Serves: 6

1 1/2 pounds fresh tomatoes
2 medium cucumbers
2 diced green peppers
1/2 red onion, thinly sliced
1/2 cup pitted black olives
1/2 cup chopped parsley
1/4 cup chopped mint

For dressing:
2/3 cup olive oil
1/3 cup red wine vinegar
2 minced garlic cloves
salt and pepper to taste
1/4 teaspoon ground cumin

Peel and seed tomatoes and cucumbers. Cut the tomatoes into cubes. Slice cucumber across.
In a large bowl, combine the tomatoes, cucumbers, green peppers, onion, slivered olives, parsley and mint.
Make dressing:
In a small bowl, whisk the oil, vinegar, garlic, salt, pepper, and cumin until blended. Pour the dressing over the vegetables and mix. Refrigerate, covered for several hours or overnight. Stir before serving.
