TURKISH CHEESE SALAD

Serves: 6

12 ounces feta cheese
3 tablespoons olive oil
1 tablespoon wine vinegar
1/2 teaspoon ground black pepper
2 stalks celery
1/2 head frisée lettuce
salt to taste
3 ounces chopped pecans

Dice cheese and place in a bowl.
In a small mixing bowl, beat together oil, vinegar, and the pepper. Sprinkle dressing over cheese.
Cover and let stand at room temperature for 30 minutes.
Thinly slice celery, cut lettuce into strips, and place them in a salad bowl.
Toss with cheese marinade and top with pecans.
