CREOLE
SAUCE
Makes: 2 cups
1 ounce butter 1 tablespoon oil
1/2 cup chopped onions 1 stick sliced celery 1/2 cup diced green
pepper 1 teaspoon minced garlic 1 tablespoon flour 1 cup tomato
puree 1/2 teaspoon thyme 2 bay leaves 1 teaspoon chili powder
1/4 teaspoon cayenne pepper 1/4 teaspoon black pepper 1/2 teaspoon
Worcestershire sauce 1 cup chicken stock
Combine butter, oil in a
2qt-saucepan. Add onions, celery, green pepper and cook until vegetables are
tender. Stir in flour. Add remaining ingredients. Simmer for15 to 20
minutes. Adjust seasoning if necessary. Use for shrimp creole and other
creole dishes.
