1/2 cup white wine 1 teaspoon
chopped shallots 1 tablespoon mustard seeds 1 cup mayonnaise 2
teaspoons Dijon mustard
Combine wine, shallots, and mustard seeds in a
saucepan. Heat to boiling. Reduce liquid by three quarters and cool. Mix
into mayonnaise. Add mustard; after 5 to 10 minutes, strain through
cheesecloth.
