CONCH
CHOWDER
Serves 8
1
pound cleaned conch 4 ounces chopped salt pork 4 ounces chopped onion
1 tablespoon flour 8 ounces chopped tomatoes 3 ounces tomato paste
1 teaspoon poultry season 2 bay leaves 2 teaspoons dry oregano
1 teaspoon salt 2 quarts water
Pound the conch. Sprinkle
with salt. Let stand for 15 minutes. Wash conch and boil in salted water for 30
minutes. Drain conch and put through a meat grinder. In a medium saucepan,
fry the salt pork with onion. Blend in the flour. Add the conch and the
remaining ingredients. Simmer for about 30 minutes. Remove bay leaves before
serving.
