Description: Spain's most famous
cheese, so named because it was originally made only from the milk of Manchego
sheep that grazed the famous plains of La Mancha. Manchego is a rich, golden,
semifirm cheese that has a full, mellow flavor. The two that are most commonly
exported are curado, aged between 3 and 4 months, and viejo, aged longer.
Manchego is a wonderful snack cheese and melts beautifully in heated
dishes
