than its cousin it has less notoriety but it will enhance your
mouth. Texture: The 3
different stage of affinage (fresh, ripe and dry) will reinforce its taste. You
like soft goat cheese : eat it fresh. You like strong flavor : eat it
dry. Taste: This cheese has
a perfect balance of acidity and saltiness which is the characteristic of this
