eggs, beaten 1/2 cup milk 1/2 cup grated parmesan 1/2 teaspoon
oregano 6 ounces egg noodles 4 ounces diced pepperoni 1 cup sliced
zucchini 1/2 cup slivered red pepper 1/2 cup sliced onion 1/2 cup
shredded mozzarella
In a large mixing bowl, whisk together eggs, milk,
Parmesan and oregano. Stir in noodles. In broiler proof pan cook pepperoni
for 2 minutes. Add zucchini, red pepper and onion. Cook, stirring, 3 to 4
minutes. Stir in egg mixture until blended. Reduce heat to low. Cook 10
to 12 minutes or until edges are set and bottom is golden. Sprinkle with
mozzarella. Broil 4 to 5 inches from heat 3 to 4 minutes or until cheese is
melted. Serve hot.
