Mashed butternut squash

  • Time cooking time: 20 minutes
  • Yield Serves 4


    1 (3 pound) butternut squash
    1/4 cup butter
    1/2 teaspoon salt
    pinch of pepper


    Peel and cut squash into cubes. In large saucepan of boiling salted water, cook for 20 minutes or until tender.
    Drain and return to pot. Mash with butter, salt and pepper.
