Tofu coffee pudding

Ingredients

    1 pound soft or silken style tofu
    1/3 cup sugar
    1/4 cup maple syrup
    4 teaspoons instant coffee granules
    1 tablespoon brandy (optional)
    1/2 teaspoon vanilla
    1/4 teaspoon cocoa

Preparation

    Unwrap tofu and place on paper towel lined plate; let drain for 15 minutes.
    Pat dry with paper towel.
    In food processor, combine tofu, sugar, maple syrup, coffee granules, brandy, vanilla and cocoa powder; blend until smooth. Spoon into dessert cups.
