Festive shortbreads

  • Time cooking time: 20 to 25 minutes
  • Yield Makes 24


    1 cup soft unsalted butter
    3/4 cup sugar
    1 egg
    1 teaspoon vanilla
    2 1/4 cups all-purpose flour
    2/3 cup cornstarch
    1/4 teaspoon salt


    Preheat oven to 325 degrees .
    Using an electric table-top or hand mixer, cream the butter and sugar until fluffy.
    Beat in the egg and vanilla. Gradually add the dry ingredients and form a ball with the dough.
    Chill for 2 to 3 hours. Shape dough into 1-inch balls. Place on cookie sheet.
    Press ball with a cookie stamp to form a design. Bake 20 to 25 minutes . Cookies should not brown.
    Cool on wire rack. Decorate cookies with frosting piped through a pastry tube.
    Store in air-tight container in a cool place.
