SHRIMP QUENELLE

8 ounces shelled shrimp
4 ounces fillet of sole
2 egg whites
1 cup heavy cream
1/2 teaspoon salt
1/4 teaspoon ground white pepper
1/8 teaspoon cayenne pepper


Clean and devein shrimp. Cut fillet of sole into 1-inch (2.5 cm.) pieces. Mix shrimp and sole in a food processor to form a paste. Add the egg whites and heavy cream while mixing continuously. Season with salt and pepper.
Use according to the specific recipe.
