SALMON PROVENÇALE

Serves 6

1 tablespoon olive oil
1 cup onions, sliced
2 cloves garlic, minced
12 black olives, pitted
2 cups tomato sauce
1 1/2 pounds boned and skinned cooked salmon
1 ounce breadcrumbs

PREPARATION
Preheat oven to 350 degrees.
Heat the oil in a frying pan. Saute the onion over low heat until tender. Add the garlic and sliced olives. Simmer over medium heat for 5 minutes.
Flake the salmon in a buttered baking dish. Pour the sauce over. Sprinkle with the breadcrumbs and bake for 15 minutes.
