SALMON SALAD
Serves
5
1 pound boned and
skinned cooked salmon 1/2 cup mayonnaise 1/4 cup vinaigrette dressing
to taste salt and white ground pepper 10 tomato wedges 1 small hot
house cucumber , peeled and sliced 1 tablespoon parsley, chopped
PREPARATION
Combine the mayonnaise, vinaigrette sauce, and salt and pepper. In a medium
bowl, Fold the mayonnaise mixture with the flaked salmon. PRESENTATION
Spoon the salmon salad in the middle of a serving platter. Decorate with
tomato wedges and peeled sliced cucumber. Sprinkle chopped parsley over salad.
Serve cold.
