SALMON STEAKS EN PAPILLOTTE

Serves 6

6 7-ounce salmon steaks
to taste salt, ground white pepper
1 tablespoon lemon juice
6 slices bacon
18 juniper berries
6 sheets parchment
1 tablespoon butter
1 cup hollandaise sauce

PREPARATION
Preheat oven to 400 degrees.
Season the salmon steaks with salt, pepper, and lemon juice. Wrap a slice of bacon around each steak. Place three juniper berries on top of each steak.
Cut the parchment paper into heart- shape. Place each steak on one side of a sheet of parchment paper. Fold the other side of the parchment paper over and seal well. Brush the paper with melted butter to prevent burning.
Arrange the wrapped salmon steaks on a baking sheet and bake for 15 to 20 minutes. The bags will then be puffed.
PRESENTATION
Transfer the salmon steaks en papillotte to a serving platter. Serve the hollandaise sauce separately.
