SHRIMP SALAD
Serves:4
12 shelled shrimp 1/2 teaspoon salt
1/4 teaspoon white pepper 4 tablespoons oil 3 ounces green pepper,
cut into julienne 1 teaspoon curry powder 3 ounces chopped tomatoes
6 peeled lichee fruit 1/2 clove garlic, minced 4 tablespoons fish
stock 2 tablespoons lemon juice 1 tablespoon mango chutney 4
lettuce leaves
Devein shrimp. Season with salt and pepper. Heat the
oil and sauté shrimp and green pepper. Dust with curry, add tomatoes.
Halve lichees and add along with garlic, fish stock, and lemon. Simmer,
covered for 5 minutes. Chill and add chutney. Arrange on lettuce leaves.
