SHRIMP AND
AVOCADOS
Serves: 6
1 tablespoon fish
seasoning 2 teaspoons salt 2 quarts water 1/2
pounds shelled shrimp 3 ripe avocados 3 ounces vinaigrette 6
lettuce leaves 6 lemon wedges 1 cup

Bring the water with the salt and fish
seasoning to a boil. Add shrimp. Bring to a boil and simmer for 2 minutes.
Drain and cool. Split avocados in half, lengthwise. Remove the pits.
Marinate the avocado halves in oil and vinaigrette for 15 minutes or more.
Cover round serving platter with lettuce leaves. Fill avocado halves with
shrimp and arrange on platter. Garnish with lemon wedges. Serve cold with sauce
verte.
