SHERRY VINEGAR MAYONNAISE

Makes 1 cup

1 large egg yolk (room temperature)
1 teaspoon sherry vinegar
1 teaspoon ketchup
1/2 teaspoon dry mustard
1/4 teaspoon salt
white pepper to taste
1cup olive oil

In a mixing bowl, combine egg yolks, vinegar, ketchup, mustard, salt and pepper. Beat with a whisk or at high speed with an electric mixture. Add 1/4 cup olive oil very slowly, beating constantly.
Add 3/4 cup more oil in a steady stream, beating constantly.
Season to taste with more vinegar and salt and pepper.
