CELERY ROOT
AND POTATO PIE

pounds celery root, trimmed, peeled and shredded 4 medium baking potatoes,
peeled, and shredded 2 small onions, peeled and shredded salt and
pepper to taste 6 tablespoons vegetable oil
Combine the celery
root, potatoes, onion, salt and pepper. Preheat oven to 350 degrees. Heat 3
tablespoons of oil in a cast iron skillet. Add the celery root mixture into
pan. Flatten evenly. Cook over medium-high heat for 5 minutes or until brown on
one side. Flip pie over a plate. Heat the remaining oil in pan, and
transfer the pie to pan to brown other side. Place pan in oven and bake 45
minutes to 1 hour, or until the cake is cooked through. Turn out onto a
platter. Cut into portions and serve.
