GARLIC
ROASTED POTATOES
Serves: 8
3 pounds small red or white potatoes 1/4
cup olive oil 1 1/2 teaspoons salt 1 teaspoon freshly ground pepper
2 tablespoons minced garlic 2 tablespoons minced fresh flat leaf
parsley
Heat oven to 400 degrees F. Cut potatoes in half or
quarters; toss with olive oil, salt, pepper, and garlic until well coated.
Spread potatoes in one layer on baking sheet, roast at least 1 hour, or
until browned and crisp. Flip twice with a spatula during cooking to ensure
even browning. Remove potatoes from oven, toss with minced parsley; season to
taste.
