PEACHES AND CREAM
1/2 cup butter, melted
2 cups graham cracker crumbs
1/3 cup brown sugar
Add melted butter to crumbs and sugar. Reserve
Press into 9 by 13" pan.
2 14-ounce cans sliced
peaches (Reserve juice plus water to make 2 cups)
1/4 cup sugar
8-ounces cream cheese, softened
1 cup sugar
cup whipping cream
Combine peaches, juice, water, sugar and cornstarch
in a saucepan. Heat and stir until it thickens. Let cool. Beat cream cheese and
1 cup sugar until fluffy.
Beat cream until stiff. Fold into cream cheese
mixture. Spread half of mixture on prepared crust.
Spoon thickened peaches
on top. Spread second half of cheese mixture over top. Sprinkle with reserved
crumbs and chill.
