CROQUE MONSIEUR

Serves 4

8 slices white bread, trimmed of crust
8 slices Swiss Gruyère cheese
8 slices ham
4 tablespoons butter
1 tablespoon mustard

Preheat oven to 350 degrees.
Arrange four of the bread slices on a baking tray. Place on each slice, trimmed to the same size as the bread, a slice of Gruyère cheese and a slice of baked ham. Spread ham with mustard.
Top with another slice of Gruyère cheese, and a slice of bread to complete the sandwiches. Melt half of the butter in a large skillet. Butter one side of the sandwiches and place them with the unbuttered side in the skillet and brown over medium heat. Turn and brown the other side.
Place the skillet in the oven for about 10 minutes or until the cheese is thoroughly melted. Trim the sandwiches if desired, cut in halves or quarters, and serve at once.
