2 medium carrots
2 medium yellow squash
4 large eggs
1 cup half and half
1 teaspoon paprika
cup grated Parmesan cheese
2 teaspoons butter
Preheat oven at 350
Grate vegetables or shred in food processor. In a 10 inch skillet
bring 2 cups water to a boil. Add vegetables and cook 2 minutes or until
tender. Drain and set aside.
In medium bowl whisk eggs and half and half;
stir in paprika and 1/2 cup cheese. Add vegetables and mix well.
mixture in buttered 13 by 9 inch baking dish; sprinkle with remaining cheese.
Bake in for 12 to 15 minutes, or until just set.
