BEAN SPROUT SALAD

Serves 2

2 cups fresh bean sprouts
1 garlic clove
2 teaspoons soy sauce
1 teaspoon sesame seeds, toasted
1/4 cup red pimentos, diced
1/4 cup scallions, chopped
1 teaspoon white vinegar

Clean and blanch bean sprouts. Rinse under cold water. Drain well.
Peel and mince garlic.
Combine all ingredients in a salad bowl. Mix well. Refrigerate for one hour before serving.
