BEET SALAD

Serves 3

1 pound fresh beets
For dressing:
1/2 cup heavy cream
1 teaspoon Dijon mustard
2 lemons
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon white pepper, ground

Wash beets and cook in boiling water until tender. Cool, peel and slice.
Blend remaining ingredients and combine with beets.
Allow to marinate an hour before serving.
