CUCUMBER
PAPRIKA SAUCE
Makes: about 1 cup
Serve this creamy dressing with
chicken and salmon.
2 tablespoons olive oil 2 shallots, sliced
2/3 cup coarsely chopped cucumbers 2 teaspoon paprika 1 cup white
wine 1 1/2 cups heavy cream to taste salt
Heat olive oil in a
medium saucepan over medium heat. Add shallots and cucumber and saute until
translucent (do not allow to color or brown). Add paprika and stir to coat
well. Add white wine and reduce liquid by about two-thirds. While stirring,
slowly add cream. Reduce the sauce by one third or until sauce coats the
back of the spoon. Season to taste with salt. Put through a fine sieve. Serve
hot.
