RHUBARB CRISP

Ingredients

  • 6 cups rhubarb, diced
    2/3 cup light brown sugar
    2 tablespoons melted butter
    3 tablespoons flour
    1 teaspoon cinnamon

    Topping:
    1/2 flour
    1 cup oat meal
    1 cup light brown sugar
    1/2 cup melted butter

Preparation

  • Preheat oven to 400 degrees.
    In a mixing bowl, combine rhubarb, brown sugar, butter, flour and cinnamon.
    Spoon into a buttered medium casserole dish.

    For topping:
    Combine the topping ingredients in a bowl. Sprinkle evenly over rhubarb mixture.
    Bake for 30 to 40 minutes. Test center to make sure rhubarb is cooked.
