APPLE HERBERT

serves 4

Ingredients

  • 4 large baking apples
    2 teaspoons raisins
    2 teaspoons soft butter
    2 teaspoons sliced almonds
    4 teaspoons melted red currant jelly
    2 tablespoons sugar
    1 teaspoon cinnamon
    1/4 cup dark rum

Preparation

  • Preheat oven to 350 degrees.
    Cut apples in halves horizontally, remove core.
    Combine raisins, butter, sliced almonds, and melted red currant jelly.
    Spoon in core of apple halves.
    Sprinkle a mixture of sugar and cinnamon over apples.
    Pour a splash of dark rum over apples.
    Bake till tender.
