    2 ounces blanched parsley
    1 tablespoon chopped chervil

  • Puree spinach and herbs with 3 tablespoons of mayonnaise. Reduce wine and shallots until liquid is evaporated. Combine all ingredients with mayonnaise. Season to taste with salt and pepper.
