LEMON-HONEY JELLO

Serves: 4

2 envelops unflavored gelatin
1/4 cup cold water
1/2 cup honey
1/2 cup lemon juice

Dissolve gelatin in cold water. Allow to set for 5 minutes. Add honey and heat over double boiler until melted. Add lemon juice and enough water to make 2 cups. Pour into a decorative mold. Set in refrigerator for 1 to 2 hours. Serve cold.
